Bruschetta Recipes?

I love bruschetta on lightly toasted bread. I don’t really have a

recipe that I use; it’s more of a “fake it” kind of thing for me. While

I can still get wonderful tomatoes, I’d love to see anyone’s favourite

recipes for this, so that I can try some different variations.

What I like to do, is thinly slice a baguette, spread a light layer of a good

pesto, then some shredded parmesan. Bake at 350 degrees until the cheese melts.

Then chop the tomatoes, toss lightly in olive oil, salt, pepper, and a light

sprinkling of basil, then add those on top of the layers of pesto & parmesan,

and return to the oven to warm through.
