Guest guest
i enjoy egg salad sandwiches every once in a while. Here is a delicious recipe that we enjoy. A bit more fancy than the typical sandwich spread we usually have, but worth the extra effort, IMO. i like to eat this in whole wheat pita pockets with fresh spinach leaves and thin sliced red onion. Egg Salad Supreme 1 package (3 oz.) cream cheese, softened 1/4 cup mayonnaise 1/2 tsp. prepared mustard 1/4 tsp. salt 1/2 tsp. dill weed 1/8 tsp. pepper 6 hard-cooked eggs, chopped 1/2 cup chopped celery 1 can (2 1/4 oz.) sliced black olives, drained 2 Tbs. chopped onion 1 Tbs. chopped pimientos Bread or pita bread In a bowl, combine the first six ingredients; mix well. Add eggs, celery, olives, onion, and pimientos; mix well. Cover and chill for at least 1 hour. Serve on bread or pita bread, using about 1/2 cup per sandwich. Yield: six servings ~ pt ~ Truth does not change according to our ability to stomach it. ~ Flannery O'Connor
