Okay, PT, that is just too weird that you knew I had 8 oz of crushed

pineapple in the fridge that I didn't know what to do with. It is leftover

from another recipe. I also have tons of cream cheese since there was a good

sale. You are a mind reader! I am thinking this will be great on whole wheat

waffles this weekend. Thanks!

This recipe is so easy with only two ingredients.

i served this with some fresh baked scones this

past Sunday. i think it would be wonderful on toasted

bagels or wrapped in a sandwich tortilla with fresh

shredded lettuce and carrots.

 

Pineapple Cream Cheese Spread

 

1 package (8 oz.) fat-free cream cheese, softened

1 can (8 oz.) crushed pineapple in juice, drained

 

In a bowl. combine cream cheese and pineapple. Chill.

Yield: 1 1/8 cups
