Guest guest Posted October 15, 2004 Report Share Posted October 15, 2004 Greetings, I just wanted to share a recipe that I make on a regular basis and I am always changing it around.....my children love the variations that I have come up..... Ingredients 4 green bananas ( I have used green plaintains also) 1 Medium onion (finely chopped) ½ pt spring water (may or may not need adjusting) 1 tbsp wholemeal flour ½ tsp freshly grated nutmeg 3 tbsp of any oil (i prefer light olive or coconut) Method 1. Slice the ends off the bananas and cut them in half crossways. 2. Using a sharp knife slit through the skin to the flesh along the length of each banana half; prise off the skin using your fingers. 3. Place the bananas in an electric blender or food processor and blend until smooth adding the water a little at a time to produce a soft consistency. 4. In a bowl, mix the bananas with the peeled and finely chopped onion. 5. Stir in the wholemeal flour and nutmeg. 6. Heat the oil in a heavy frying pan, pour in the banana mixture and fry on both sides until golden brown. 7. Divide into portions and serve garnished with salad.
