Vegetarians, that is to say lacto-ovo- or lacto-vegetarians, eat cheese - by definition. Those following a plant-based diet only are themselves a tiny fraction of the buying public. But some people, non-vegetarians as well as vegetarians, are health conscious and want to avoid animal fat because of the cholesterol and not necessarily for ethical vegetarian reasons. Therefore soy cheese is invented and marketed. Frankly, considering the lack of consideration for vegans in the world for the main part, I consider it amazing that a vegan cheez would be on the market at all. Not so much hypocrisy as a different agenda, different market, I think. IMHO. Me? I try to avoid lactose cuz cuz cuz it it it <aaaahhhhh chooooo> (sorry).
