[recipe] Vegetable Corn Salsa (plus free recipes by email, and supporting a good cause)

Peak of the Market was probably one of the biggest grower owned

vegetable suppliers where I used to live, in Winnipeg MB (Canada). I

just found out that for each person who signs up for their free email

recipes during the month of October they will donate 50 lbs of

vegetables to Winnipeg Harvest. Winnipeg Harvest is a GREAT cause.

They provide food to hundreds of soup kitchens, shelters, daycares and

food banks all over Manitoba. I did some volunteer work for them when I

lived in Winnipeg, and they’re a wonderfully dedicated organization.

 

 

 

So, if you’re interested in getting some yummy recipes in your email

periodically (you can decide how often – daily, 2x/week, weekly, etc),

signing up. You can look through their recipe archives, to see if the

recipes look like something you’d be interested in. You’ll get good

recipes and be helping a wonderful cause at the same time. (Not all the

recipes are vegetarian, but many are, and the ones that aren’t can

pretty easily be modified.)

 

 

 

You do NOT have to be in Canada to sign up. There are options for USA,

etc. They will still donate the veggies, no matter where you live.

 

 

 

Here’s today’s recipe, which I plan to try this weekend if I have time:

 

 

 

 

Homemade Vegetable Corn Salsa (by Chef Craig Buenther of The Market 520)

 

½ lb carrots, finely diced

 

1 large red onion, finely diced

 

2 red peppers, finely diced

 

2 green peppers, finely diced

 

3 jalepeno peppers, finely diced

 

1 ½ cup corn kernels

 

5 beefsteak tomatoes, diced

 

2 limes, juice and zest

 

1 tsp sugar

 

1 tsp pureed garlic

 

salt to taste

 

1 bunch cilantro, finely chopped

 

 

 

Prepare vegetables and mix in a large bowl. In a small bowl mix lime

juice and zest, sugar, garlic and cilantro. Season with salt to taste.

Mix spices with vegetables. Let sit overnight for flavours to come

together. Serve with nacho chips or crackers.
