Guest guest Posted October 6, 2004 Report Share Posted October 6, 2004 hello everyone: I am not vegetarian, but do eat a lot of vegetarian foods.In dealing with arthritis and allergies, I have eliminated a lot of common foods from my diet. I have replaced them with more variety than I used to eat. I have learned to have bread[ok pancakes, sorta] without gluten or eggs and a whole lot more.I love good veggies and can eat most of them, except for the nightshade family. I am always on the lookout for great vegetable dishes. I am quite a good cook and have created a lot of different grain pancakes to deal with replacing the wheat, rye, oats, and barley I used to consume. Some things I find substitutes for, some I do without. I have a problem digesting simple sugars, so can't eat fruit or anything containing any amount of sugar, so I just don't eat sweets anymore. To me all artificial sweeteners taste exacly like their name.. artificial.Also, they just make me realise what I am missing, so I just avoid em. Here's a RECIPE[kinda] for graincakes made with rice and millet flours 1/2 cup rice flour 1/2 cup millet flour 2 tablespoons ground flax[ I use golden as opposed to brown, it's supposed to contain more of the good fats], 1 tsp salt[optional] 1 cup water, or more to make it a bit thinner than you would normally like your pancake batter. LET SIT at least 10 minutes, overnight is better. adjust liquid to suit how you like pancakes, add 1 tbsp baking soda, stir in, then add 1 tbsp apple cider vinegar. cook as for wheat pancakes, except they take longer to cook. Let the bottom set well before you try to flip the cakes.eat warm or cold. I like em with nut butter on em, but if you can have sugar, then jam, syrup or honey would be great on them. send me feed back if ya like em or not.any improvements would be wonderful too.
