Just posting a recipe that sounded real good, I love couscous and will probably try this out sometime this coming week! In peace, darquesal From Lauryn Couscous with Tomato and Basil Ingredients (use vegan versions): 2 teaspoon vegetable or olive oil 2 cloves garlic, minced 2 teaspoon dried basil *or* 1/2 cup chopped fresh 1 1/4 cup water or vegetable stock 1 cup couscous 1 cup finely chopped tomatoes 1/4 cup chopped parsley salt and pepper Directions: This is a very easy recipe...and it's sooo yummy! 1) In a nonstick saucepan, heat oil over medium heat; cook garlic for 2 minutes or until softened. 2) Add basil (if using dried) and water; bring to a boil. Stir in couscous. Cover and remove from heat. Let stand for 5 minutes. Fluff with a fork. Stir in tomatoes, basil (if using fresh), and salt and pepper to taste.
