RECIPE: Quick & Easy Cream of Tomato Soup

I found this recipe on vegweb.com. finally a cream of tomato soup i like! I

made my own little changes to the recipe to try something different. I omitted

the onion and added: 1 fresh tomato, seeded & chopped; 2 tablespoons fresh dill;

1 to 2 teaspoons curry powder, & about 3/4 cup white (cannelini) beans. If you

just have dried dill instead of fresh, use about 1/3 what the recipe alteration

calls for. 1 tablespoon fresh herb = 1 teaspoon dried. I also used fat-free soy

milk instead of rice milk, and I'll tell you, it did not sacrifice anything in

the way of taste.

Quick and Easy " Cream " of Tomato Soup

 

Ingredients (use vegan versions):

 

a.. 4 tablespoon finely diced onion

b.. 1 tablespoon soy sauce

c.. 1 8 oz. can tomato sauce

d.. 2 cup rice milk

e.. 2 tablespoon cornstarch

f.. seasonings to taste

Directions:

 

Last night, I had a craving for cream of tomato soup, so I made up this recipe.

This is loosely based on a recipe I learned in my 8th grade home economics class

(over 20 years ago).

 

Saute onion in soy sauce until onion is tender. Add 1 1/2 cups of rice milk and

8 oz. tomato sauce to onions, and bring to a boil. Mix 2 T. cornstarch with

remaining 1/2 cup of rice milk. Add cornstarch/rice milk mixture to soup,

stirring constantly until thickened. Season to taste with your favorite

seasonings. (I used a little onion powder and some spicy Creole seasoning.)
