It's great inside enchiladas, burritos and as a side dish. Mexican Rice: 1 cup long grain rice 1/4 cup salsa (mild, medium or hot in a jar) 1 1/4 cups water 1/2 onion chopped Saute rice and onion in one tablespoon of oil until onion is transparent and rice is starting to brown just a little. Add water and salsa, bring to a boil, cover and simmer on low for about 15 minutes. (optional) when rice is done you can add sliced olives, 1/2 cup of corn and some chopped chives for extra flavor and color. vote. - Register online to vote today!
