Twice Baked Potatoes 1 baking potato per person (or 1 for every 2 people if they’re large) skim milk butter sour cream cheese chives bac’n bits (non-meat, of course!) salt and freshly cracked pepper garlic any other condiments you like with your baked potatoes Wash the potatoes thoroughly, then prick several times with a fork. Bake in the oven at 425F for 45 – 50 minutes (depends on the size of the potatoes). No need to wrap them in foil when you do this. When the potatoes are baked, remove them from the oven and slice each one in half. When they’ve cooled enough that you can handle them, scoop out the potato, leaving about ½ to ¼ “ shell. Add milk, butter and cheese to the potato and mash well, til smooth. Add any other condiments you like with your potatoes, and whip until the mixture is light and fluffy. Spoon back into the potato shell (this will overfill them, so heap them up high!) Place the potatoes on a baking sheet and return to the oven.
