Raw Un-croutons

1 cup raw sunflower seeds

2 tablespoons Italian seasonings

1/4 teaspoon salt

2 tablespoons agar agar flakes

water as necessary

 

Bring some water to a boil in a kettle or teapot. Meanwhile, in a food processor

combine sunflower seeds, Italian seasonings and salt and let run until the

contents arc pulverized. In a measuring cup place 2 tablespoons of agar agar and

pour 1/4 cup of hot water over it. Stir vigorously with a fork to dissolve the

agar agar as much as possible for about 30 to 45 seconds, then add the contents

of the cup to the food processor. Again let the food processor run for about 15

seconds or until the agar agar solution is evenly distributed. Moving quickly,

spoon the contents of the food processor into a small square 6 " square

Tupperware' pan, pressing down with spoon so that the top is even. With a knife,

score the contents of the plastic container and set aside. Let rest at room

temperature until the mixture firms. Break the squares out of the container and

sprinkle over the Soulful Tahini Caesar Salad or salad of your choosing.

NOTES : We invented these raw croutons to go with our Soulful Tahini Caesar

Salad (page 71) so that those who wanted to make the raw version of this recipe

would be able to enjoy it. But the croutons came out so well that there's no

reason they can't go with any green that you might normally top with croutons.
