I thought you might be interested in her menu, especially if you are " vegan " and " gluten free " . The meal was delicious and if you didn't stop to figure it out. . .you would never know it was a " special needs " diet! Here's what we had: Tofu Turkey Loaf: A blend of tofu and water that is placed in cheesecloth and then in a colander. Let is " drain " overnight and become solid. Then hollow out the center and fill with cornbread stuffing. Use the filling that you removed to cover the stuffing. Turn it onto a cookie sheet that's lined with parchment and bake. The tofu firms up and makes the casing for the stuffing. Excellent! Meat Balls: A mixture of crushed blue corn chips, whizzed garbanzos, ground pecans, and Ener-G egg replacer. Add some salt or seasoning of choice. Mashed Potatoes and Brown Gravy: Vegan mashed potatoes and browned gravy made with cornstarch. Tossed Green Salad with Lemon Juice and Olive Oil Dressing Steamed Broccoli Soy Good (Dairy Desert) with Thickened Berry Topping Grape Juice YUM!
