Guest guest Posted January 12, 2004 Report Share Posted January 12, 2004 Fruit Nut Balls Recipe By: Farm Journal 1 cup pitted prunes 1 cup pitted dates 1 cup dark raisins 1 cup light raisins 1 cup shredded coconut 1/2 cup wheat germ* 1/2 teaspoon salt 2 tablespoons honey (or alternative liquid sweetener) 2 tablespoons orange juice 1 teaspoon grated orange peel 1 cup nuts -- finely chopped Put prunes, dates, raisins and coconut through food chopper, using fine blade. Knead in wheat germ, salt, honey, orange juice and orange peel. (The amount of moisture in dried fruits varies. If mixture is sticky, knead in a little more wheat germ. If mixture is too dry, add a small mount oforange juice.) Form into 1 " balls. Roll in nuts. Cover tightly and store in refrigerator up to 1 month. Makes about 4 dozen balls.
