Guest guest Posted January 11, 2004 Report Share Posted January 11, 2004 Brown Rice with Almonds A rice dish that is slightly crunchy in texture and sweet in flavor. 2 1/2 cups brown rice, washed 1/2 cup almonds, washed 4 1/2 cups water salt, pinch Place the almonds in a saucepan, cover with cold water, and bring to a boil. Boil for 1 - 2 minutes. Remove from the heat and place the almonds in a strainer to drain. Discard the cooking water. Squeeze the almonds one by one to remove the skins. Discard skins. Combine the par-boiled, skinned almonds with the brown rice in a pressure cooker. Add water and place the uncovered pressure cooker over low heat until the water comes to a boil. Add the salt, place the lid on the cooker, and turn the heat to high. When the pressure comes up, reduce the heat to medium-low. Cook for 45 - 50 minutes. Remove the cooker from the heat and allow the pressure to reduce. Then open and allow rice to sit for 4 - 5 minutes before serving.
