Guest guest Posted January 11, 2004 Report Share Posted January 11, 2004 Brown Rice with Onions and Black Olives 2 cups organic long grain brown rice, washed 2 cups onion, diced 2 - 3 Tbsp. oil 4 cups water 1 cup pitted black olives, sliced 1 Tbsp. parsley, finely chopped, for garnish Heat the oil in a skillet and add the diced onion. Saute for 2 - 3 minutes. Add the rice and saute for another minute or two. Add the water, cover, and bring to a boil over high heat. Reduce the heat and simmer for 15 - 20 minutes. Add the olives, cover, and continue cooking for another 35 - 40 minutes until the rice is done and all the water has been absorbed. Remove the rice and place in a serving dish, gradually mixing in the chopped parsley with each scoop of rice.
