Guest guest Posted January 11, 2004 Report Share Posted January 11, 2004 Chestnut Rice 2 cups brown rice, washed 1 cup dried chestnuts, washed and drained 4 1/2 cups water salt, pinch Heat a skillet and place damp chestnuts on it to dry. Dry-roast by stirring with a wooden spoon. When the chestnuts are slightly golden in color and release a sweet, nutty aroma. Place the roasted chestnuts in a pressure cooker. Add the water and brown rice and mix all ingredients together. Bring the ingredients to a boil over medium heat. When water is boiling, add salt. Place the lid on the pressure cooker and turn the heat to high. When the pressure is up, reduce the heat to medium-low and cook for 45 - 50 minutes. Remove from heat and allow the pressure to come down. Then remove lid. Allow the rice and chestnuts to sit for 4 - 5 minutes and then place in serving bowl.
