Guest guest Posted January 9, 2004 Report Share Posted January 9, 2004 Coconut Cream Source: Country Kitchen Collection 2 cups water 2/3 cup coconut 1/4 cup cornstarch 2 Tbsp. honey (or alternative liquid sweetener) 1/4 tsp. salt Blend coconut and water for 1 minute. Add remaining ingredients and blend. Stir over medium heat until thickened. Chill and serve. Great with lemon pie!
