Guest guest Posted January 9, 2004 Report Share Posted January 9, 2004 Sweet and Sour Casserole Source: Country Kitchen Collection 2 cups dry lima beans 2 Tbsp. soy sauce 1 bay leaf 1 Tbsp. olive oil 1/2 cup brown sugar 1 Tbsp. cornstarch 1/2 cup water 6 tofu links, cut, optional salt to taste 1/2 cup lemon juice Wash beans, soak in 6 cups of water at least 6 hours. Drain. Cook beans in 5 cups of water until tender, about 2 1/2 - 3 hours. Add more water if necessary. Add remaining ingredients to beans. Bake at 350 degrees F. for 60 minutes. ***If gluten free: use wheat free soy sauce. Tofu links that are vegan and gluten-free are available in the produce department of some grocery stores, but are difficult to find. Omit if necessary.
