Guest guest Posted January 8, 2004 Report Share Posted January 8, 2004 Sweet and Spicy Rice and Beans 1 onion, chopped 2-3 cloves garlic, minced 1-2 t minced fresh ginger 1 can kidney beans, drained and rinsed 1 can diced tomatoes, drained (reserve liquid) 2 to 4 T tomato paste cinnamon and chili flakes to taste a tiny pinch of saffron (optional) 1 1/2 cup cooked brown rice balsamic vinegar to taste Saute the onion, garlic and ginger in a little water until softened. Add the beans, tomatoes, tomato paste and spices. Cook until thoroughly heated. Add reserved tomato liquid if desired. Flavor with vinegar. If you lose control of the bottle, as I often do and get too much vinegar, counter it with a teaspoon or so of brown sugar. Stir in the cooked rice and heat through.
