Guest guest Posted December 10, 2003 Report Share Posted December 10, 2003 AVOCADO & TOMATO PASTA SALAD Source: Heather McDougall This delicious and simple salad can be served hot or cold but I think my mom and I like it best cold. The success of this dish really depends on the freshness of the avocados and tomatoes you use, making summer the perfect time of year to enjoy this salad. This dish is easy enough for teenagers to make and enjoy by themselves. Craig McDougall has been known to make this for himself when Heather or mom are busy. 3 cups dried pasta (medium shells work well) [or use raw zuchini/summer squash] 2-3 cloves fresh garlic, pressed 3 medium, ripe tomatoes, chopped 2 medium avocados, peeled and chopped juice of one lime sea salt to taste Cook the pasta to al dente. When pasta is done rinse with cold water. Combine all fresh ingredients in a large bowl and add sea salt. Add pasta and stir well.
