Guest guest Posted December 10, 2003 Report Share Posted December 10, 2003 Avocado and Pine Nut Salad Source: The Cook's Color Treasury 1 large ripe avocado 1 1/2 t. lemon juice 1 T. pine nuts 1 1/2 T. olive oil Sea salt 1 clove garlic 4 fresh mint leaves Cut the avocados in half and remove the seed. Peel away the skin, dice the flesh and put into a bowl. Sprinkle with the lemon juice and toss lightly until avocado is coated. Add the pine nuts. Sprinkle with oil, season and toss. Peel and crush the garlic into a small bowl. Wash the mint leaves and shred finely. To the garlic, add the mint leaves and mix well. Pour over the avocado and toss lightly. Chill for 1 hour.
