Any idea how to subsitute the egg inthe Lemon Sauce?? Anyone esle have good persimmon recipes?? I have a bunch about ready to be ripe. Thanks Amy Persimmon Pudding with Lemon Sauce 1 c. sugar 1 c. persimmon pulp 1 c. flour ( Bobs redmill GF flour mix??) 1/2 c. milk 1/2 c. chopped nuts (optional) I use pecans. 1/2 c. raisins 1/4 tsp. salt 1 Tblsp soda 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. ginger 1 tsp. vanilla 1 Tblsp. melted butter Mix dry ingredients, pour in milk, mix well, add nuts and raisins. Add persimmon pulp last. Mix thoroughly. Pour into greased baking dish, cover with foil and set in pan of water. Bake 70 minutes in a 375 degree oven. Serve with lemon sauce, hot or cold. Lemon sauce 1 c. sugar juice and grated rind of 1 lemon 1 egg (Replace how???) 1/4 lb. butter ( Margirine) 4 Tblsp. water Combine ingredients and cook in a double boiler until thick.
