Fake Feta

 

1/2 pound firm tofu, rinsed and patted dry

2 tablespoons red wine vinegar (may substitute apple cider vinegar or lemon

juice)

1 tablespoon fresh lemon juice

4 teaspoons olive oil

1/2 teaspoon dried basil leaves

1/2 teaspoon dried oregano leaves

1/2 teaspoon salt

1/4 teaspoon garlic granules

1/4 teaspoon ground black pepper

 

Cut the tofu into 3/4 inch cubes, and place in a wide, shallow ceramic

or glass mixing bowl. In a small measuring cup or mixing bowl whisk

together the remaining ingredients for the marinade. Pour the marinade

over the tofu chunks, tossing gently so that they are evenly coated.

Cover, and marinate in refrigerator overnight.
