Guest guest Posted November 25, 2003 Report Share Posted November 25, 2003 Fake Feta 1/2 pound firm tofu, rinsed and patted dry 2 tablespoons red wine vinegar (may substitute apple cider vinegar or lemon juice) 1 tablespoon fresh lemon juice 4 teaspoons olive oil 1/2 teaspoon dried basil leaves 1/2 teaspoon dried oregano leaves 1/2 teaspoon salt 1/4 teaspoon garlic granules 1/4 teaspoon ground black pepper Cut the tofu into 3/4 inch cubes, and place in a wide, shallow ceramic or glass mixing bowl. In a small measuring cup or mixing bowl whisk together the remaining ingredients for the marinade. Pour the marinade over the tofu chunks, tossing gently so that they are evenly coated.
