Guest guest Posted November 18, 2003 Report Share Posted November 18, 2003 TACO SOUP 1 - 28 oz. can tomatoes, chopped 1 - 19 oz. can kidney beans 1 - 16 oz. can kernel corn 2 Tbsp. Taco Seasoning (which usually consists of oregano, chili powder, garlic powder, onion powder, etc.) 1 large onion, chopped and steamed Combine all ingredients. Simmer for 30 minutes. Serve hot with corn chips if desired. (I like the chips crumbled in the soup). *Variation: add 1 tsp. cumin (YUM!) OR minced garlic *Variation: add 1/4 cup textured vegetable protein (vegeburger) - unless gf *Some people add vegan sour cream on top for garnish and flavor.
