Cooking For One / was A marginally happier Dragon

Oh Cindi hon, if you're not motivated to cook or prepare food just for yourself

you need to indulge yourself. You really need to be kind to yourself this

summer!

 

Why not buy absolutely lovely things that need little preparation (asparagus, if

you like it, artichokes, avocado - this last, er, in moderation of course LOL).

Switch to wonderful wraps, stir-fried dishes, one-pot stews that will last all

week. A one-person crockpot, they tell me, is a boon (I'm thinking of getting

one for the two of us - my other is BIG - for when I can't be around to watch

what's on the stove for dinner). Or sub fruit for some vegetable dishes

(watching the calories, of course) - lovely berries are still available here and

they are practically guilt-free as far as slimming is concerned :)

 

On that note, I'm lazy this summer and have found that my dh isn't in the mood

to cook right now either (we usually find it fine to take turns, but sometimes

we both fight for the kitchen and now for some reason are both shunning it!). So

we have gone towards raw - not completely, since we still eat soups and curries

now and then, but mostly raw. We really are getting seduced by that kind of

food. Chop it up or slice it, blend it, eat it whole, whatever - the simplest of

the raw dishes are lovely and the simpler the easier and quicker to prepare.

Worth a thought while you're taking off all those pounds (lucky woman!).

 

Be kind to yourself especially over the move - always such a fraught time!

Yea, I know of easy things to make but I can't even muster that right now!  And

I just put a hold on my CSA deliveries until 9/9 when I'm settled in to my new

place. 

 

I have been enjoying some lovely summer fruit as snacks, so that's good at

least! 

 

I did manage to make the cats 8 days worth of food last night, too bad I can't

do the same for myself in less then 1/2 hour, huh?

 

Thanks for the kind words; I'll be moving out 8/22 and then will be moving in

the new place 8/30 or 8/31.  Two moving days!  I know, I know, you're all

jealous!  :-D
