While we like our fruit raw, this is a good one to keep for those days when we might want to make it a little more fancy. It would be good for visitors too. I note that there are only 121 calories per serving Love and hugs, Pat PCRM Recipe of the Week June 24, 2008 Summer Fruit Compote Dear PCRM supporter, This is a delicious blend of flavors that can be served for breakfast, dessert, or a midday snack. Directions Makes 4 1/2-cup servings 2 cups sliced fresh peaches (peeled, if desired) 2 cups hulled fresh strawberries 1/2 cup white grape juice concentrate or apple juice concentrate Combine all ingredients in a large saucepan. Bring to a simmer and cook for about 5 minutes, or until fruit just becomes soft. Serve warm or cold.
