my menu for next week

Hi everyone,

 

 

 

Here is my menu for next week.

 

 

 

Monday - Bombay potatoes with green beans

 

Tuesday - goat cheese and spinach turnovers, grilled mushrooms,

grilled tomatoes

 

Wednesday - corn fritters and salad

 

Thursday - cheese and broccoli crustless quiche served with carrots

and salad

 

Friday - fresh homemade wholemeal bread, spreads, salads, cheese

 

 

 

I know it might sound a bit heavy going on the cheese side, but I do

cut way down on what the recipe suggests. When we have fritters I

shape them then cook them in the oven on a lightly oiled oven tray

rather than frying them.

My recipes for the week are:

Whole Wheat Couscous with Broccoli & Walnuts

Kasha with Carrots

Sweet & Sour Edamame with Vegetables

Rice Fried Vegetables

Salads

 

Just haven't decided which we'll eat what day. Between the veggies we're

getting in our produce delivery tomorrow & the veggies we got at the Co-op

yesterday, the edamame & rice dishes will have combinations of carrots,

broccoli, cauliflower, bell pepper, onion, kale, collard greens & snap peas.

Yum! :-)
