We also had a nice salad with mixed greens, radish, cucumber, tomato, carrots & sprouts. Cindi Edamame & Tomatoes with Cilantro 2 tbs olive oil (can be reduced) small onion or 3 scallions, chopped 1 large garlic clove, minced 1 1/2 cups chopped tomatoes (I used 2 fresh tomatoes, canned would work) 1 tsp cumin 2 cups frozen shelled edamame salt & pepper 1/4 cup chopped cilantro Cook onion & garlic in oil (or water) until onion softens. Add tomatoes & cumin and cook until tomatoes break down. Add edamame & season with salt & pepper; cook until edamame is heated through. Taste and adjust seasonings if needed (I added another big pinch of cumin). Top with cilantro and serve. 4 servings As is with the oil, worked out to be 3.2 points per serving for those doing WW.
