Hi Cassie,

 

 

 

I haven't really got a recipe for my broccoli strudel. It's

something I have been making for years. You can also use a mix of

broccoli and cauliflower if you like and I have also sometimes added

some carrots .

 

 

 

I start by steaming the broccoli (or whatever vegetables I am

using). I then make a VERY thick white sauce with flour,

butter/margarine [less butter/margarine than flour] and as much as

necessary of the steaming water. I flavour the sauce with some

smoked paprika or chilli (depending on if you like things mild or

spicy). If you use salt you will probably want to add some to the

sauce but we try to stay away from salt as much as possible. I add a

little bit of cheese to the sauce but not too much because of the

hideous amount of calories contained in cheese. When the sauce is

thick and the broccoli thoroughly drained I stir the broccoli into

the sauce and allow it to cool a little. I use about 3 sheets of

phyllo pastry one on top of the other, each one brushed with as

little melted butter/margarine as possible. When the pastry is laid

out and buttered(or margarined, if that's a word!) I simply put the

broccoli mix on the pastry and roll up the pastry. Put the strudel

on a baking tray with the seam side of the strudel underneath then

brush the top of the strudel with a little extra melted

butter/margarine. I usually sprinkle on a few sesame seeds but you

could also use dried herbs to save calories and add extra flavour.

Warm the strudel through in a moderate oven for about 25-30 minutes

until the pastry is cooked and lightly browned. Check it frequently

as phyllo pastry can go from raw to burnt very quickly!!!

 

 

 

I loved your story about your 'love-hate' relationship with your

husband. I think we have matching senses of humour.

There are probably plenty of others out there but this one seems

fairly easy to use.
