Use it to top tortillas (I usually cut and bake into chips). Shredded lettuce, salsa and better than sour cream. I LOVE all easy tex-mex, but this is one of my at home favorites. I am going to make some enchiladas tonight with collard greens I got from an organic coop. I will let you know how they turned out.
