I invented this tonight because I was too tired to do

much more than open cans. :-)

 

1 14-16 oz can vegetarian baked beans

1 14-16 oz can black beans

1 14-16 oz can tomatoes and green chilies (Ro-Tel)

1/2 20-oz can crushed pineapple

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon cinnamon

1/2 teaspoon allspice (my allspice was old, so 1/4

teaspoon may be enough)

 

Mix all ingredients and heat over medium heat until

bubbling (about 10-15 minutes). I'm sure it would

work well sitting on low for a longer period of time,

too.

 

This is made with ingredients that most of us probably

keep on hand anyway! (You could certainly use fresh

tomatoes and onions and the like if you had the time

and the inclination...I just didn't tonight...long

day!) It goes without saying that since this is all

canned, it should be served with something healthy and

fresh and GREEN...and maybe have some fresh mango for

dessert to keep with the tropical theme? :-)

P.S. I've been vegan for three weeks now, and I've

lost 5 pounds! I don't feel deprived at all and I

feel more vital and strong and " clean. " My health

problems (headaches and digestive woes) seem to be

lessening as well. I'm more convinced than ever that

this is the way to live! :-)
