I have been thinking of you off and on when certain kinds of issues arise here on Vegetarian Slimming. You've been missed bigtime. I remember being so sad when you d so many months ago but I thought, well, maybe the list has lost interest for her. Well, lovely to 'hear' your voice again I'm dancing! Well, I just had to turn my back on it for months and then turned around and bought some Tofutti slices, which taste pretty good in sandwiches which have lettuce, onions, cucumber, sprouts, tomatoes, etc. - with Nayonnaise and/or mustard to give everything a kick. It isn't cheese, of course, but it does satisfy that craving. I keep some in the freezer for those times when I really want to have cheese, although that's been a long time now. So I sympathize, is what I'm saying! I think the subs might work if you like the blander cheeses, but I always loved aged cheddars, the sharpest of the blue cheeses, etc. (many of which, of course, were probably not really vegetarian either!). Others might have much better suggestions, and I would welcome them for you! Nice to have you back. Don't go away again if you can help it. Take good care. I will have to try the Tofutti slices. Maybe freezing them changes the texture for the better? If I could even make a pretty good grilled cheez sandwich, I'd be happy. I don't know if it's the fat or salt or both that make the real thing so hard to give up. I hope that all is well with you and your DH. Well, anything soy comes out of the freezer a little firmer, but that's not my intent. It's just that we don't use them often - so I freeze them until needed. It's so long since I tried, but I remember being disappointed with the texture (yes, even before freezing). Not 'melty' enough. Another brand? Both, actually, and also there's supposed to be an opium-like (hah! hyperbole here I'm sure ) chemical in real cheese that is very more-ish. So good to have you back.
