The focus of the class was demystifying tofu, tempeh and seitan. I've cooked with tofu before (stir fry, baked for sandwiches), but I didn't know what to do with tempeh or seitan. The instructor was impressive. She is an animal rights activist and she uses her cooking classes to empower those of us who want to be vegan, but don't know how. She's got a great personality and I wouldn't be surprised if she had her own show on the food network someday. Her business is called, " Compassionate Cooks. " She gave us a quick and easy tempeh salad recipe. The trick is to heat the tempeh so that the brown rice (tempeh is fermented brown rice and soy beans) can expand; the raw, bitter taste goes away after the cooking process. We cut the tempeh into one ince cubes, steamed it for about 10 minutes and then let it cool. They we used the tempeh as you would use ch*ck*n to make a salad. You could add celery, peppers, nuts, raisens, mango, grapes, curry powder, herbs de Provence, taragon or whatever you'd like. We used vegan mayo but you could substitute part soy yogurt or tofutti to cut calories, or you could forgo the creamy texture and use light vinegrette instead. You could serve it with bread, crackers, over baby greens, wrapped in lettuce cups, or plain. I've already made it for my non-vegan family (used, walnuts, celery, curry powder mixed with veganaise, raisens, carrots, parsley) and they liked it and requested that I make it again.
