LESLIE - vegetarian diabetics

Hi Leslie,

 

I haven't had too much time to research this properly as we have a friend from

Malta staying with us for a few days. I am sure that I have a vegetarian

diabetic cookbook somewhere with an interesting introduction but I can't lay my

hands on it at the moment. I have cookbooks all over the house (collecting them

is my hobby) and I'm not quite sure where to look. When I come across it I'll

give you the details.

 

Here are a few sites I found by doing a quick Google search.

 

I was diagnosed with type 2 diabetes two years ago and my nurse is amazed at

how good all my test results are now. I have been a vegetarian for longer than

I care to remember and the nurse is sure that my diet contributes significantly

to my good test results.

 

Despite being vegetarian I was (and still am) significantly overweight but I

have lost about 50 pounds since being diagnosed and still have almost that much

again to lose. I have not yet been able to make the switch to a completely

vegan diet but I have cut down significantly on dairy products and other fats

and I only have about 1 egg a week now. Other changes I have made are reducing

portion sizes and doing much more exercise than I ever did before. To be

perfectly honest with you, I did virtually no exercise for 60 years so I have a

lot of catching up to do!!

Cookbook " by Patricia Stevenson and Michael Cook. The info on how well

vegetarian diets work for diabetics is out there even though it may be hard to

find. Does anyone else have any other sources?
