I am sure that I have a vegetarian diabetic cookbook somewhere with an interesting introduction but I can't lay my hands on it at the moment. I have cookbooks all over the house (collecting them is my hobby) and I'm not quite sure where to look. When I come across it I'll give you the details. Here are a few sites I found by doing a quick Google search. I was diagnosed with type 2 diabetes two years ago and my nurse is amazed at how good all my test results are now. I have been a vegetarian for longer than I care to remember and the nurse is sure that my diet contributes significantly to my good test results. Despite being vegetarian I was (and still am) significantly overweight but I have lost about 50 pounds since being diagnosed and still have almost that much again to lose. I have not yet been able to make the switch to a completely vegan diet but I have cut down significantly on dairy products and other fats and I only have about 1 egg a week now. Other changes I have made are reducing portion sizes and doing much more exercise than I ever did before.
