Very tasty!

 

Since it just said to cook the potatoes and didn't say how, I boiled

them. Instead of the 14 oz can of tomatoes, I used what I had on hand,

which was a 10 oz can of chopped tomatoes mixed with lime and cilantro

(coriander leaf) and hot peppers. I also used no oil at all and sauted

in vegetable stock instead.

 

When I recorded it in my diet software, I found that the entire recipe

has 1270 calories. So those of you who count calories - there's your

number to divide up into however many servings you make of it. Add

about 125 if you use a tablespoon of oil. Add about 30 if you have a

full 14 oz can of tomatoes.

I have added the calorie count to the bottom of

the recipe - 1425 including oil to be divided by

the number of servings. Thanks very much!! Very

useful info indeed :)
