I slowly found myself a vegetarian after about a 10 year evolution. I grew up eating and enjoying meat, chicken, pork, fish, everything. As an animal lover, when I discovered how intelligent pigs are - smarter than my dog that I loved so much - I couldn't stomach the thought of consuming them simply because I liked the flavor of bacon! Slowly, this evolved into no red meat, then fish and chicken soon left my plate as well. Funny, I'm not terribly fond of beans - usually a vegetarian's path to protein - so I'm always blending them into bread mixes, even " healthier " cupcakes and cookies. Mmmm! Very moist! Anyhow, as I learn more about healthy eating I become increasingly confident in remaining a vegetarian and raising my children as such. Hope this answers your question. My weight is an issue, but I also wanted to decrease my cholesterol, eat more fruits and vegetables, and eat fewer refined carbohydrates.
