How do I cook Butternut sqash?

I was having my usual shop yesturday and thought to try something

different for a change, so I bought a couple of aubergines,

avocados, sweet patatoes and red onions.

The sweet patatoes with soya mince and red onions was very nice,

its the first time I have cooked with those deep red onions,

they give a better flavour than the regular.

Now I come to the Butternut suash that I would like to have bought

also, but with it being so large, and not knowing how to cook it,

I had to leave it. Has any one here tasted this vegetable,

or know how to cook it?

I have made a promise to myself that I will try a new vegetable every

few weeks, and use some of them as snacks to weed myself from

cheese which I seem to eat at least most days. Maybe this is what it

leaving me with such a bloated stomach, and the constent feeling of

fullness.

What amazes me is that when I have eaten a good meal with lots

of vegetables I feel full, but can not sustain this because a cheesey

taste is still in my mind.

I can't not have it in the fridge because my son likes it.

I think it has taken the place of chips in most peoples lives,

as an alternative, but it is still bad.

I think it is excellent that you are going to be trying new veggies each week.

My partner and I receive a weekly box of organic produce from a local farm and

have been introduced to new veggies this way. It's great broadening your

horizons!

 

As far as butternut squash, I have chopped it and stir-fried it with other

veggies for our veggie tacos, I used it in our Thanksgiving meal last year,

harvest pot pies, and used it in a harvest chili. You can see these dishes on

You can also halve it and bake it (cut side down) until you can slide a fork in

real easy. It has a nice sweet taste and is actually very versatile. Baking

squash is one of the easiest ways to enjoy it.
