Also feel free to send in any tried & true low-fat/cal recipes you are fond of as we all need new inspiration sometimes! Veggie Roast 1 tomato 1 sweet onion, peeled 1 green bell pepper handful of fresh mushrooms, cleaned 8 or 10 cloves of garlic, peeled 2 tablespoons of olive oil Seasoning- I like Key Lime Pepper or my own seasoned salt that is a bit peppery or my own Awsome Seasoning Cut all veggies into 1 inch chunks. Toss into a large bowl and drizzle olive oil over top. Mix or toss until evenly coated with oil. (I use my hands I like to connect with my food.) Sprinkle with seasoning to taste and mix again. Spread out on a 13x9 pan. Set oven 400 degrees and cook 25 to 40 minutes until browed and soft. I do not preheat the oven. These are great on their own but if you have to share you can serve over rice or pasta to make them go further. You can also mix up a double batch and freeze half and for a quick meal just toss in the oven. Awsome Seasoning... 3 tablespoons paprika 1 tablespoon onion powder 1 tablespoon garlic powder 1 tablespoon salt 1 tablespoon pepper 1 tablespoon sugar 1 tablespoon dried basil 1 teaspoon oregano 1 teaspoon thyme 1/2 teaspoon sage 1/2 teaspoon ginger 1/2 teaspoon nutmeg 1/2 teaspoon cumin 1/16 teaspoon cayenne Mix well (I like to shake it together in an old coffee can) and store in an artight container. This season goes great on everything but fruit and ice cream. Moo's Seasoned Salt 2 tablespoons pepper 1 tablespoon veggie bouillon powder 1 teaspoon onion salt 1 teaspoon onion powder 1 tablespoon garlic salt 1 teaspoon cumin powder 1 teaspoon dry marjoram leaves 1 tablespoon minced parsley 1 teaspoon paprika 1/2 teaspoon curry powder 1 tablespoon chili powder 1/3 cup salt Mix well (I like to shake it together in an old coffee can) and store in an artight container.
