Tofu Lasagna

This is the fabulous tofu lasagna recipe that I found, I believe, in a

Good Housekeeping magazine many years ago. The original recipe calls

for 1/4 lb butter, but I reduced the butter to just a pat and

" sweated " the mushrooms. Delicious.

 

Tofu Lasagna

 

 

 

Makes 8 servings.

 

 

 

Ingredients

 

1 tsp + butter

 

½ lb. fresh mushrooms, thinly sliced

 

3 cloves garlic, finely chopped

 

½ tsp. salt

 

1/8 tsp. pepper

 

3 cups spaghetti sauce

 

½ cup wheat germ

 

1 cup mashed tofu

 

¼ cup Parmesan cheese, grated

 

½ lb. low-fat mozzarella cheese shredded (2 cups)

 

¼ cup parsley, fresh, chopped

 

8 oz. lasagna noodles, cooked and drained

 

 

 

Directions

 

 

 

1. Melt butter in large skillet.

2. Add and coat mushrooms, garlic, salt and pepper. Cover skillet

with wax paper and then skillet pan cover. Lower light to " sweat "

mushrooms about 5 minutes

3. Stir in spaghetti sauce and wheat germ. Heat through.

4. Combine tofu and parmesan in small bowl.

5. Combine mozzarella and parsley in another small bowl.

 

 

 

Layer as follows in a 11+ by 7+ glass baking dish:

 

1. Place 1/3 of lasagna noodles.

2. Spread half of the tofu mixture.

3. Pour over 1/3 of sauce.

4. Top with 1/3 mozzarella.

5. Repeat.

6. End with 1/3 of lasagna noodles.

7. Pour over 1/3 of sauce.

8. Top with 1/3 mozzarella.

 

 

 

Variations: Layer with sliced zucchini. Add ricotta

 

Bake 350 for 45 minutes; let stand 15 minutes.

Thanks, Diane, I've put it in the Files. That does look like a lot of

mozzarella, but I took to account that it was low-fat cheese you specified

and that the dish served eight people . . . . So it's rather 'borderline'

for this group LOL but there anyway ;)
