Guest guest Posted August 10, 2007 Report Share Posted August 10, 2007 well it's the opposite over here, it's midwinter, so I am resisting eatings loads of cheese and roast potatoes etc.my fave in summer is 'composed salads'. on the weekends i'll cook up some beans or chickpeas, roast tofu cubes and vegies, grill peppers and eggplants. and then throughout the week quickly throw together a salad out of a few of the bits and some fresh greens.another good quick summer one is a small piece of a strong, beautiful cheese (if it's very tasty, eg a good stinky blue or washed rind, you only need a little bit), with a healthy dip (eggplant, hummus, ricotta and caper, beetroot), and plenty of fresh vegies. -- We've Got Your Name at http://www.mail.com !
