I find it very encouraging hearing what others are having for dinners.

Especially people who have been vegetarians most their lives who have a well

balanced diet. I will post last weeks but don't laugh I do have kids and it is

baseball season so it has to be quick.

Monday:Oriental Noodles (peanut sauce) with broccoli

Tuesday: Quorn Ckn, baked potato with peas

Wednesday: Peach Cobbler with Tempah Bacon and fruit (breakfast night)

Thursday: Leftover night

Friday:Pizza Night (Family night out)

Saturday:Falafels with corn

Well, I did menu planning for this week for the first time. Our suppers are

as follows (each one has additional fruits and vegetables too, I just grab a

variety from the fresh/frozen food in the fridge. And drinks.):

 

Monday: tacos

Tuesday: stir fry

Wednesday: salad, brown beans and toast, fries

Thursday: taco salad

Friday: homemade pizza

Saturday: (birthday) vegan chinese takeout

Sunday: picnic (lunch) and leftovers (supper)

Hi,

 

Here is this week's menu for my family. I cook double side veggies so

I can have the same veggies for two lunches and dinners in a row.

 

Mon:

Bfst: Baked Apples and Bananas (make 4 days' worth), 1/4 cup almonds

Lunch: Lunchtime Green Smoothie, raw veggies

Dinner: Easy succulent white beans, frozen broccoli stir-fry (double),

baked Portobello mushrooms (double), salad

Snack: Cherries

 

Tues:

Bfst: Baked Apples and Bananas, 1/4 cup almonds

Lunch: Leftovers, raw veggies, berries

Dinner: Frozen peas, frozen broccoli stir-fry, baked Portobello

mushrooms

Snack: Cherries

 

Wed:

Bfst: Baked Apples and Bananas, 1/4 cup almonds

Lunch: Leftovers, raw veggies, berries

Dinner: Barley Bake, Green Beans with Tomatoes (double), Frozen

Ranchero veggies (double), salad

Snack: Cherries

 

Thurs:

Bfst: Baked Apples and Bananas, 1/4 cup almonds

Lunch: Leftovers, raw veggies, berries

Dinner: Braised Brussels sprouts, green beans with tomatoes, Frozen

ranchero veggies, salad

Snack: Cherries

 

Fri:

Bfst: Banana Strawberry Breakfast Smoothie (double; put one in

fridge), 1/4 cup raw cashews

Lunch: Leftovers, raw veggies, berries

Dinner: Black Bean Chili with Mushrooms, salad

Snack: Cherries

 

Sat:

Bfst: Banana Strawberry Breakfast Smoothie, 1/4 cup raw cashews

Lunch: Leftovers, raw veggies, berries

Dinner: Salad w/can of white beans and avocado dressing

Snack: Cherries

 

Sun:

Bfst: 2 apples, 1/4 cup raw cashews, water, plain herbal tea

Lunch: salad w/canned green beans and avocado dressing

Dinner: Leftovers, raw veggies, berries

Snack: Cherries
