Just slow boil in vegetable broth and a bay leaf with whatever vegetables (small diced,bell peppers or carrots, usually for me) you like until lentils are tender. Discard bay leaf before serving. Spiced Red Cabbage ½ head red cabbage, diced 1 tart apple ½ c. chopped onion 3 T. red wine vinegar 1 T. Olive oil (I use a bit less) 1 T. sugar 1 bay leaf 1t. Salt ½ t. ground cloves ½ t. pepper Boil cabbage in water for one minute. Drain and return to pot; stir in apple, onion, red wine vinegar, oil, sugar, bay leaf, salt, ground cloves and pepper. Cover and simmer 1 hour or until cabbage is tender. Remove bay leaf. Serves 6. For me this is comfort food at it's best.
