Guest guest Posted May 16, 2007 Report Share Posted May 16, 2007 Anyone need a quick and easy recipe for curry? Which happens to be a great way to use up leftover veggies in the fridge, by the way. Here's what I do for ten-minute curry [my own " creation " ]: 1 can lentil soup 1 can beans [rinsed] - I like chickpeas or fava beans, but whatever you have in the cupboard will do 1 cup or so of whatever leftover veggies are in the fridge [anything - corn, cauliflower, potatoes, green leafies, whatever] curry seasoning to taste [i prefer curry paste like Patak's, but powdered curry blend is fine too] some chopped onion if you like some garlic if you like Dump it all in a pot and simmer ten minutes or so.
