Hi Pam ~

 

Mmm...parsnips. We made a really good roasted root vegetable not long ago

with parsnips, carrots, onions, baby gold beets & potatoes. Man it was tasty!

Roasting really brings out the sweetness of those veggies.

 

Taco salad sounds delish! Thanks for the idea.
