Guest guest Posted April 14, 2007 Report Share Posted April 14, 2007 well I heard the moans this morning as I made out my grocery list PB & J, Cheese sandwiches with lettuce, cereal with soymilk, and bagels with cream cheese again Mom! So I stopped and promised the boys I would ask the groups I am involved in what's in your kids lunchbox? My boys don't like hummus, cold eggs or cold veggie nuggets what is a mom to do? Guest guest Posted April 15, 2007 Report Share Posted April 15, 2007 Hi Steph, Of course, being vegetarian " sometimes " limits our choices of what goes inside the sandwich but my Mom was the queen of interesting lunches. She used pita bread and tortillas WAYYYYYYYYYYYYY before they were " in " . How about a PB & J wrap? Or chop up a bunch of veggies and throw them in a halved pita. My Mom also made us her own concoctions. The night before, she would take these sesame crackers, they were quite large, and spread cream cheese on them, a little season salt, wrap em up and leave in the fridge over night. In the morning the cracker would have been softened by the cheese, and she would put something like sliced cucmbers on it and roll it up. Also, we'd have PB & banana sandwiches on banana bread. EVERYONE wanted my lunches....and I just wanted potato chips heeheehee. Also, there is a fabulous site by this genius mom called Vegan Lunchbox. GOOGLE that and check it out.
