I am newly vegetarian (one year) and trying to be vegan (much easier since

I discovered a good soy cheese).

Do tell! Which brand? What is " good " about it?

It is Soy-Sation. It does contain casein, so it is not vegan - but far

better than regular cheese. It is made with certified organic soybeans

and expeller-pressed canola oil. Free of lactose, cholesterol and

preservatives: Cheddar, Mozzarella, Garlic & Herb and Pepper Jack.

I have tried mozzarella and cheddar. They grate nicely, melt devinely

and provide that warm ooey, gooey comfort food feeling of cheese.

If anyone knows of a cheese that doesn't have casein but melts and

tastes like cheese - please do tell.

I bought Soy Sation at Trader Joes and it is wonderful! I even like it better

than regular cheese and it melts perfectly on enchiladas. The key for most

vegetarians is to avoid rennet. This is hard because sometimes the

manufacturers use the term enzymes which can be plant or animal.
