It does contain casein, so it is not vegan - but far better than regular cheese. It is made with certified organic soybeans and expeller-pressed canola oil. Free of lactose, cholesterol and preservatives: Cheddar, Mozzarella, Garlic & Herb and Pepper Jack. I have tried mozzarella and cheddar. They grate nicely, melt devinely and provide that warm ooey, gooey comfort food feeling of cheese. I even like it better than regular cheese and it melts perfectly on enchiladas. The key for most vegetarians is to avoid rennet.
