Linda - this is my own recipe that I concocted when I first became vegetarian - and didn't want to give up chili. I read somewhere to use eggplant in place of the ground beef. Half an eggplant would be fine as I've tinkered with this recipe in the past, adding extra here, less there - I've started using the tomatoes & kidney beans & ground been substitute that are Mexican spiced and less chili powder. I know that corn isn't in most conventional chili recipes but I love it! 1 large onion 1 clove garlic 1 large can kidney beans 1 large can stewed tomatoes 1 eggplant or package of vegetarian ground beef substitute 1 can corn niblits chili seasoning to taste salt & pepper Put couple T. of butter or margarine in pot and saute the onions till they're clear. Drain and rinse the kidney beans and add to the pot with the rest of the ingredients. Simmer all together for at least an hour before serving. This freezes really well.
